Ingredients

  • 16 oz Chicken Beast Cubed
  • 1 small Yellow Onion Chopped
  • 2 cloves Garlic Sliced
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Ground Tumeric
  • 8 Fresh Shitake Mushrooms Sliced
  • 1 1/2 cups Fresh Kale Julienned
  • 4 cups Low Sodium Chicken Broth
  • 1 cup Butternut Squashed Cubed
  • 2 tbsp Fresh Ginger Grated
  • 1/8 tsp Cayenne Pepper
  • 1 Lemon Juiced
  • 1 tsp Miso Paste

Instructions

  • Brown chicken in skillet
    16 oz Chicken Beast
  • Heat oil in a large pot to medium-high heat and saute onions and garlic for 3 minutes.
    1 small Yellow Onion, 2 cloves Garlic, 1 tbsp Extra Virgin Olive Oil
  • Add mushrooms and tumeric to mixture and continue to saute for 2 minutes
    8 Fresh Shitake Mushrooms, 1 tsp Ground Tumeric
  • Add broth, kale, squash, ginger and cayenne to mixture.
    1 1/2 cups Fresh Kale, 4 cups Low Sodium Chicken Broth, 1 cup Butternut Squashed, 2 tbsp Fresh Ginger, 1/8 tsp Cayenne Pepper
  • Bring to a boil, reduce heat, cover and simmer for 15 minutes.
  • Remove from heat and let cool for 5 minutes. Add in lemon juice and miso paste to thicken. Let stand for 5 additional minutes before serving.
