P’s Chicken Soup

Ingredients
- 16 oz Chicken Beast Cubed
- 1 small Yellow Onion Chopped
- 2 cloves Garlic Sliced
- 1 tbsp Extra Virgin Olive Oil
- 1 tsp Ground Tumeric
- 8 Fresh Shitake Mushrooms Sliced
- 1 1/2 cups Fresh Kale Julienned
- 4 cups Low Sodium Chicken Broth
- 1 cup Butternut Squashed Cubed
- 2 tbsp Fresh Ginger Grated
- 1/8 tsp Cayenne Pepper
- 1 Lemon Juiced
- 1 tsp Miso Paste
Instructions
- Brown chicken in skillet16 oz Chicken Beast
- Heat oil in a large pot to medium-high heat and saute onions and garlic for 3 minutes.1 small Yellow Onion, 2 cloves Garlic, 1 tbsp Extra Virgin Olive Oil
- Add mushrooms and tumeric to mixture and continue to saute for 2 minutes8 Fresh Shitake Mushrooms, 1 tsp Ground Tumeric
- Add broth, kale, squash, ginger and cayenne to mixture.1 1/2 cups Fresh Kale, 4 cups Low Sodium Chicken Broth, 1 cup Butternut Squashed, 2 tbsp Fresh Ginger, 1/8 tsp Cayenne Pepper
- Bring to a boil, reduce heat, cover and simmer for 15 minutes.
- Remove from heat and let cool for 5 minutes. Add in lemon juice and miso paste to thicken. Let stand for 5 additional minutes before serving. [adding miso when to hot can diminish probiotic benefits]1 Lemon, 1 tsp Miso Paste
