P’s Greek Salad Cuke Boat!

  • 2 large Cucumbers or 4 Small
  • 2 tbsp Red onion chopped
  • 4 Roma Tomatoes
  • 2 tbsp Fresh Basil
  • 1/4 cup Black olives sliced
  • 2 tbsp Crumbled Feta


  • Cut cucumbers in half and scrape out seeds.
  • In large bowl add onion, tomato, basil, black olives and feta
  • Fill each half of the cucumber boats with mixture.
  • Cut in half and serve!


Use Cucumber Boats for Tuna Boats!
Great with Chicken Salad or any of your favorite sandwiches.
