Heat oil to medium-high heat in a large pot.
1 tbsp Olive Oil
Add onions and garlic. Saute until tender, about 5 minutes.

Add ginger, curry powder, cumin, salt and cinnamon stirring constantly for 1 minutes.
1 tbsp Fresh Ginger, 1 tsp Curry Powder, 3/4 tsp Ground Cumin, 1/2 tsp Sea Salt, 1/4 tsp Ground Cinnoman
Add the water, sweet potatoes and apples. Bring to a boil over high heat.
4 cups Water, 3 large Granny Smith Apples, 1 1/2 pound Sweet Potatos
Reduce the heat to low, cover, and simmer for 20 minutes or until the potatoes are tender. Stir often.
Add contents to food processor in batches. Puree each batch until very smooth.
Combine all batches in a pot for reheating. Top with Cilantro to serve.
